Port is a fortified wine made in Portugal’s Douro Valley that’s usually served as a dessert wine. Port is known for its sweetness and is most commonly red, however dry, semi-dry and white varieties are out there. The addition of a neutral grain spirit gives port its characteristic kick.
Sherry is a fortified wine that comes from Andalusia, Spain, made from predominantly white grapes.
Believed to stimulate the appetite, sherry is commonly taken before a meal as an aperitif. Depending on the grapes from which it’s made and how it’s aged, sherry comes in a few varieties:
Fino is dry and pale
Manzanilla is lighter and more refreshing
Amontillado is exposed to oxygen during the ageing process to darken the colour and develop the flavour
Oloroso is also exposed to oxygen and aged for considerably longer than other types of sherry, giving it a more intense flavour profile, a higher alcohol content and darker colour
Palo Cortado is similar to Oloroso, but somewhat lighter
Cream is a blend of several different types of sherries to create a smooth, mellow flavour and texture.
