Anejo, meaning ‘Aged’ is a full-flavoured style of Tequila more suited to contemplative sipping rather than mixing into a cocktail. After the distillation stage, this lovely, deep coloured spirit is matured in old oak barrels that are often reused from making Bourbon or Tennessee Whiskey. These old Whiskey barrels lend Anejo Tequila a fabulous hint of smoky sweetness while still managing to keep that classic Tequila taste.
Fermented using Agave rather than cane sugar, Tequila often has a fresh, grassy tone to it, something which is particularly prominent in Anejo. The flavours picked up during its time in cask- usually between one and three years, tend to include coconut, vanilla and pepper which results in a new and complex spirit. Each batch is carefully overseen to preserve its great balance of flavours. Each distillery has a unique little spin they put on the distilling and maturing process which sets them all apart from one another.
