La Gitana Manzanilla dry Sherry from historic wine firm Bodegas Hidalgo is the ideal start to any discerning dinner party or as great accompaniment to tapas.
After a carefully controlled fermentation of yeast and grapes, which takes place in water cooled tanks, this initial wine is then fortified using a grape alcohol. The mixture is then placed into oak barrels, veiled with a thick layer of yeast to prevent oxidisation and to also impart flavour, and then left to mature for up to 7 years.
Dry, crisp and with a delicate freshness, La Gitana is considered as a classic offering from the Manzanilla house, established way back in 1792. Try a bottle today for a real taste of Spanish history.
