The first thing you notice about this offering from Colombian born Dictator is its striking black bottle.
Inside rests a 20-year-aged rum, packed full of sweet caramel, buttery vanilla and jammy cherry flavours. The rum begins life as sugar cane honey, fermented then distilled with two processes, one part in a copper alembic still, one part in a continuous steel column. It is then aged in a Solera system for a minimum of 14 years. Too strong for bottling, the final rum is then brought down to a respectable 40% ABV by adding demineralised water drop by drop over a period of 28 days.
A real labour of love, the final product is packed full of sweetness, spice and pepperiness, accented with flavours of cooked fruit, cedar wood and cigar leaves.
Sip on its own to really appreciate all the hard work that has gone into this well-balanced Colombian rum.
