The liqueur called Averna has been in existence since the early 1800s, when it is thought that Benedictine monks in Northern Italy created the herbal bitter liqueur. The recipe is a closely guarded secret, yet we do know that the ingredient list includes pomegranate and essential oils of bitter lemons and oranges.
There’s also an infusion of Mediterranean herbs and spices. Averna is widely enjoyed in Italy, though its popularity is growing. The drink is usually enjoyed on its own, over ice, though innovative bartenders are starting to see the aromatic blend as a good addition to modern cocktails too. Its distinctive dark brown and thick appearance is characteristic of Averna and a sign of its impeccable production.
